All We Can Do Is Laugh

I love my air fryer.

Best kitchen appliance I have ever bought.

Everything goes in it - potatoes, leftover pizza, fish, chicken, almost anything you can eat.


Last Friday night, I air-fried chicken breasts for dinner with the kids.


My air fryer isn't super big, so I had to cook a few at a time.


The last piece of chicken was still frying when we sat down to eat.


I didn't take it out when it was done because it was safe in the air fryer.


If we leave food out on the counter, my cat thinks she deserves to eat it.


That's a blog post for a different day...


After our meal, I put away the leftovers from the table, we cleaned up the kitchen, and then moved on with our night.


And forgot all about that last chicken breast.


I had plans to stay at Brian's house that Saturday night.


He didn't have an air fryer, so we decided to take mine with us so we could make sweet potato fries.


So the air fryer traveled with us in the back of Brian's car.


We went about our weekend, running errands, preparing for Easter, all that fun stuff.


And along the way, Brian decided to buy his own air fryer.


So mine sat on his kitchen floor until Sunday, when it traveled back to my place.


Fast forward to Monday evening.


It had been a long day at work, so I wanted a quick, easy dinner.


I decided to heat up some of the leftover chicken in the air fryer.


I turned it on for two minutes to warm up.


Then opened it to put the chicken inside.


Imagine my surprise when I pulled out the basket and there was already something inside!


A dried-out, overcooked, three-day-old chicken breast.


I threw it away, so I'll spare you the picture.


But I had to laugh.


Jake would have called it a "Mom Moment."


After nearly 50 years on this earth, I've collected more than my share of those.


The countless times I've left my coffee mug in the microwave, because I got distracted by a million things to do around the house.


The many out-of-place things I've found in my freezer because I'm doing too many things at once. Always check there first when you're missing something!


The moments where I walk into a room and completely forget what I went in there for in the first place.


And don't even get me started on how many times I've been searching for my glasses when they were sitting on top of my head!


I like to think I'm a pretty smart person.


But I also think that as we get older, our brains only have so much capacity to hold all of the things we need to remember.


There just isn't enough room - stuff is bound to leak out.


But this is also what makes life fun.


I know all of you have stories like this, too. I'd love to hear some of yours!


It's important that we don't take life too seriously when these silly moments happen.


All we can do is laugh.


Throw the chicken breast away.


And embrace our humanity.
